YELLOW TAIL

Our family-owned winery is in the small country town of Yenda, Australia. This is where [yellow tail] wine is made by the sixth generation of the Casella family.

In 1957, founders Filippo and Maria Casella migrated from Sicily and arrived on Australian shores. They began making wine with the family’s winemaking philosophy at its heart; to bring family and friends together at any occasion.

It was this approach that inspired John Casella’s vision for [yellow tail] in 2001; to create an approachable wine that everyone could enjoy. By doing so, he wanted to demonstrate that wine could be fun, easy to choose, easy to drink and easy to understand.

Our talented wine making team put a lot of passion and expertise into creating [yellow tail]. It is about making consistently great wines that over deliver on taste and quality; wines that are accessible and appealing to people all over the world.

Today John Casella continues to run the family business using the same principle of creating great tasting wines for all to enjoy. By combining a passion and understanding of the Italian heritage with a relaxed and modern Australian attitude, Casella continues to create wines that have wide appeal and will be enjoyed for generations to come.

PINOT NOIR
TASTING NOTES

[yellow tail] Pinot Noir has a very “pretty” nose with berry notes.
The palate is enticing and delicate with fresh flavours of cherries, red berries and sweet spice

MERLOT
TASTING NOTES

[yellow tail] Merlot has soft aromas of ripe plums, mulberries, lingering vanilla and the sweet spiciness of Christmas cake.

Fresh and juicy flavours of sweet plums and raspberries complement the chocolate and spice aroma, with hints of aniseed that comes from the careful integration of American oak. It finishes soft, rich and simply delicious.

CABERNET SAUVIGNON
TASTING NOTES

[yellow tail] Cabernet Sauvignon is a bright red colour with a fragrant nose of primary red fruits and blackcurrants. Aromas of crushed blackberries with sweet mocha also fill the nose.

[yellow tail] Cabernet Sauvignon is bursting with rich blackcurrant fruit, red cherry and a hint of earthiness, this wine is mid-weight and displays a soft velvety finish with notes of mocha and vanilla.

SHIRAZ
TASTING NOTES

Youthful and vibrant red wine laced with purple hues. Concentrated black and blueberry fruit is complemented by subtle liquorice and notes of vanilla, mocha and spice.

Soft and juicy on the palate, with concentrated fruit flavours along with vanilla notes providing long, persistent flavour giving structure and a nicely weighted finish.

SHIRAZ CABERNET
TASTING NOTES

[yellow tail] Shiraz Cabernet has dense dark fruit aromas of rich plum, blackcurrant & raspberry.

Flavours of fresh red berries combine with blackcurrants and a little herbal complexity fills the mouth.

CHARDONNAY
TASTING NOTES

Chardonnay begins with a pale straw colour laced with light green hues and entails a broad range of vibrant lifted aromas including tropical fruits such as citrus, lemon and white peach with a light spice and vanilla undertone that continues through to the palate.

The perfect balance of citrus and peach flavours coats the mouth with a creamy mouth feel and persists to a long lingering finish of peach and white spice. This is a lovely fresh and zesty wine that is also supported nicely by subtle, vanilla oak.

SAUVIGNON BLANC
TASTING NOTES

Sauvignon Blanc is the perfect blend of Australian fruit to bring out the highest quality characteristics merged together through climate and growing techniques.

The Australian fruit brings light citrus and lemongrass notes with undertones of gooseberry, limes and hints of passionfruit.

This is unmistakably Sauvignon Blanc at its clean, crisp best with passionfruit combining with grapefruit to create a vibrant, long and fresh palate with crunchy acidity.

SEMILLON SAUVIGNON BLANC
TASTING NOTES

Semillon Sauvignon Blanc is a perfect partnership between two great varieties. The Semillon provides lively lemon, lime and cut grass aromas while the Sauvignon Blanc adds undertones of passionfruit, gooseberry, guava and herbaceous notes.

This synergy continues onto the palate filling your mouth with zesty fresh fruit flavours and finishing with a mouth watering crisp acidity.

PINOT GRIGIO
TASTING NOTES

Pinot Grigio is delightfully fresh with aromas of pear, hints of green apples and
passionfruit.

This Pinot Grigio has a crisp, clean palate. A splash of passionfruit and subtle hints of nashi pear lead into flavours of crisp green apples with subtle citrus notes.

MOSCATO
TASTING NOTES

Moscato is full of natural sweetness. It displays bright fruit aromas of white peach, passionfruit, floral orange blossom notes with a hint of sweetness.

This wine has a light fizz that tingles in your mouth highlighting lively tropical fruit flavours and a crisp acidity.

ROSÉ
TASTING NOTES

The wine displays fresh aromas of strawberry, rose petal florality, honey dew melon with light notes of musk and raspberry.

Rosé palate displays a textured fruity, strawberry palate with a lingering classy tannin line which rounds off the palate giving a lingering fresh mouth feel.
